Solyanka
Some people say it's a strange concoction, but in a good way. This lovely soup has it all. Beef, Beacon, Smoked chicken, Salt cucumber, Olives, Tomato paste, Sour cream, you name it. The capers (and caper juice), lemon, pickled cucumbers and olives give this liquid goodness a lot of kick. This one is a fish-based soup that is a great stress reliever. It has a clearer and lighter broth as compared to botvinya. If you are a vegetarian, this soup is not for you as fish is the only essential ingredient here. The beef in it is cooked to perfection and it is simply fall-apart tender. Okroshka
This is a delicious soup that is native to the Urals and goes perfectly in summers. Traditionally it is made from a combination of odd ingredients but at Muscovites we make it with Potato, Boiled Egg, Cucumber and Chicken. The toppings include Spring onions, Sour cream and Red radish. There are places in Russia where people like to make the stock with sour cream and a fermented rye drink. They then add some meat (usually bologna), cucumbers, radishes, cold boiled potatoes, dill, and cold boiled eggs. All these are nicely diced which makes the soup even more delicious.
